Organic Brown Rice Milk

1/2 Cup of Organic Brown Rice
64oz of water
1/4 tsp. sea salt
3 tbsp. Organic Maple Syrup (optional)
1/8 tsp. Cinnamon (optional)
1/2 tsp. Vanilla (optional)

Place water, salt and rice in a 5qt. pot.
Heat to a boil.
Simmer, covered, on low for 3 hours.
Let Cool.

Pour half of the rice mixture into a blender and puree for 3 minutes.
Pour into container.
Repeat puree step with other half of rice mixture.

Combine in larger container to evenly distribute. Store in glass jars in the refrigerator for up to a week.

Makes about 7 cups. (1 cup shy of a half gallon due to evaporation)

Directions – Optional Ingredients:
While rice mixture is still in the blender, add in half of the maple syrup, vanilla and cinnamon and blend as directed above.
Repeat with the second half.

Depending on the rice you use, you may want to adjust the amount of syrup so it is not too sweet. Brown rice is generally sweet. Use brown rice, not white. You can also add more water back into the mixture to make it thinner. The boiling/simmering will evaporate a bit of the water.

As you can see in the photo, I put mine into a mason jar, there were two, but I have already gone through the first quart! I guess if you started off with a bit more water it would compensate for the loss of water during the 3 hour simmering process.
